Unlike other butchers, we receive grass fed and finished whole bodies of beef in to our processing facility. We then dry age the premium cuts for 28 days, and process the rest of the cuts every week, ensuring you receive a fresh, quality product every time. All of our lamb is hand-picked each week by our farmers and is grass fed and pasture finished without the use of grains. We only ever choose the best of a farmer’s lamb – not necessarily all of their lamb – to ensure a premium product for you throughout the year. To read more about our lamb production, click here.
All our pigs are grown outdoors for the duration of their lives, free from sow stalls and sheds. By choosing our pork you can be guaranteed that it is truly Free Range. Our pork products are; smaller in portion size when compared to factory farmed pork, much more flavoursome, and have slightly more fat coverage (good crackling!). All of our poultry is free range and supplied by poultry farmers around the greater Sydney area. We only source poultry from certified free range processors whose farmers use best practice to ensure an ethical and more sustainable product. The poultry is housed in large sheds with genuine access to grass and sunshine. All of our poultry products are hormone free.
We have a range of smoked goods that we produce in our very own smokehouse. These products are as natural as possible and have the great flavour of a free range product. Our range includes nitrate free bacon and ham (preservative free), Chorizo and other smoked sausages, and smoked chicken and duck.
