•  The striploin is located along the spine in the hindquarter and runs from the ribs to the rump, sitting above the tenderloin and ribs. Sirloin steaks are cut from the front of the loin, they are a knife blade away from the scotch fillet. 
• These thick steaks need to come to room temperature before cooking, are best sealed on a hot plate, BBQ or Grill till crust forms to taste. Finished in a warm roasting oven or similar (warm BBQ) away from direct heat until 45 degrees then rested until reaching 50-55 degrees. leave them in the oven longer for a more well done but best eaten rare to medium
